Chocolate Peppermint Fudge
Rich chocolate layered with sweet and crunchy peppermint is the perfect combination for a winter day.
Ingredients
STEP 1:
- 1 bag #2717 Sweet Selections® Base Fudge Mix
- 10oz. water
- 2 sticks butter (1/2 lb.)
- 3 cups crushed peppermints
STEP 2:
- 1 bag #2715 Sweet Selections® Chocolate Fudge Mix
- 12oz. water
- 4 sticks butter (1 lb.)
Directions
- Turn on the fudge cooker.
- Add 10oz. water and 2 sticks butter to kettle; let stir until melted.
- Slowly add one 7 lb. bag of #2717 Sweet Selections® Base Fudge Mix and crushed peppermints.
- If mix is too dry, add more water, an ounce at a time. Let stir until the mix is smooth and shiny, about 160ºF.
- Split the mixture between two 13x9x2 parchment-lined pans and spread evenly.
- Quickly steam clean the kettle.
- Add 4 sticks of butter and 12oz. of water to the remaining mixture in the kettle and let stir until butter is melted.
- Slowly add one 7 lb. bag of Sweet Selections® Chocolate Fudge Mix.
- If mix is too dry, add more water, an ounce at a time. Let stir until the mix is smooth and shiny, about 160ºF.
- Split the mixture between the two half-filled pans evenly.
- Top with additional crushed peppermints if desired.
- Let set up and cool for 8 hours or overnight.
- Slice and serve.
- Store in an airtight containter at room temperature.
